Sundried Tomato and Coriander Roulade

With Ramadan 2017 upon us, Muslims all over the world are fasting (to abstain from food and drink) from dawn to dusk and are deep in spiritual thought and repentance. With that in mind, it is important to keep daily meals fuss-free, quick and easy. The latest trend at Iftar at the moment is clean and healthy eating. It is all about the savoury revolution !!

In my home, I am keeping it simple and nutritious with more wholewheat additions and protein-based appetizers. Of course, I cannot throw out the family favourites of samosas and springrolls, but I believe, everything must be in moderation. You have to keep the family interested at meal times and cannot replace all the foods that they enjoy. I have included more mezze style food with dips and salads. Today, I share with you my roulade with a difference, it is delicious and can be served at Iftar or an appetizer at a braai or at dinner.

Sundried Tomato and Coriander Roulade

Ingredients :

  • 500g chicken mince
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp chicken spice
  • 1 tsp green chilies
  • 2 tblsp chopped Sundried Tomato 
  • 2 tblsp chopped coriander 
  • 1 medium red onion, chopped
  • 2 tblsp breadcrumbs 
  • A pinch of cinnamon 
  • A pinch of cardamom powder
  • Filling :
  • 1 potato, mashed
  • Green chutney 
  • Sauce :
  • A mix of barbecue sauce, sweet chili sauce, tomato sauce and sesame seeds. 

Directions :

Combine all the Roulade ingredients. Lay 2 pieces of greased foil, divide mixture into half and spread into a square on to the foil. Place potato filling in the center and roll up both ends to the middle and seal with the foil. Steam on a rack over boiling water on 180 degrees Celsius for 1 hour. 

Remove the foil, and brown on a non stick pan for a few minutes on each side. Serve drizzled with the warm sauce and crushed potato chips.
