Appetizers are my favourite type of food to prepare. I love all types of mini foods that are easy to make (and eat!) and that require no forks and knives. A meal in two bites !
These chicken tortillas are just the perfect bite sized canapé. They are easy to prepare and most ingredients are pantry staples. You could add any of your favourite fillings into these tiny crunchy bites.
Mini Chicken Crispy Tortillas
Yield : 24 mini
Preparation time : 30 minutes
- Shredded cooked chicken
- Shredded lettuce
- 4 flour tortillas
- Grated cheese
- Oil for brushing
- Avocado slices
- Sour cream
- Pepperdew relish
Preheat oven to 180 degrees Celsius. Remove grill rack from the oven and place over a dish.
Using a small round cutter, cut out 6 circles from each tortilla.
Place rounds in a damp cloth and microwave until warm and bendable.
Brush each disc with cooking oil.
Drape each tortilla over each bar of the grill rack to form a taco.
Place in the oven for about 7-10 minutes until crisp.
Remove and allow to cool.
Prepare all the filling ingredients.
Fill each taco with a little sour cream and relish, then the lettuce, chicken, an avocado slice and finally the cheese.
