Caramel Mint Tiramisu

With the holidays approaching, and more family functions and weddings set for the Summer months, we would all like to spend less time in the kitchen and more time dressing up and spending time with our guests.

This caramel mint tiramisu is a combination of two quick and easy classics : tiramisu and peppermint crisp tart. Both these desserts are delicious and always popular at functions. By combining a South African favourite and an Italian classic, the end result is a flavour explosion of mint, caramel and coffee. The best part is that it is really simple to make, and you could easily double or triple the quantities for larger crowds. I hope you enjoy making and eating these little sweet treats !

Caramel Mint Tiramisu

Yield : 24 mini bowls

Ingredients :

  • 1 box sponge fingers e.g. Bakers Boudoir Biscuits
  • 1 fresh cream
  • 1 tub mascarpone cheese
  • 1 tin Nestle peppermint flavoured Caramel Treat
  • 1/4 of castor sugar, or more if you prefer it sweeter
  • 1 mug of strong coffee
  • 1 slab Nestle Peppermint Crisp, finely chopped

 

Directions :

Prepare the coffee and decide on your serving dish/es.

Whip the cream and sugar until fluffy, incorporate the mascarpone cheese until smooth and fold in half the tin of caramel treat.

Dip half the box of boudoir biscuits into the hot coffee and lay in your dish or one boudoir in each bowl if you choose to do individual servings. Spoon over half of the remaining caramel treat and spread over the soaked biscuits. Pour over half the cream mixture, and repeat with the coffee-soaked biscuits, caramel and end of with the cream mixture. Garnish with chopped Peppermint Crisp and edible flowers (optional).
