Weekday lunches are the perfect time for me to experiment with different flavours and to create healthy, filling meals for one.
After coming home from school rounds, I like to create a quick and easy meal for myself which is healthy and gives me a burst of energy before leaving the house again for other kids lessons. I prefer to use pantry and fridge staples and try to use previous night supper leftovers to create another delicious and nutritious meal.
I hope that you do try my weekday lunch ideas and please feel free to substitute ingredients and spicing to suit your tastebuds.
