Salami and Cream Cheese Frittata

From my previous posts, you will see that Sunday breakfasts are always a treat in my home, with new flavours and creations on the menu.
If you have not tried my one pan breakfast hash as yet, you should check it out soon. It is so easy and quick and everything is made in one pan so there is less washing up after.

This frittata is also an easy and delicious breakfast idea. As much as I like to create new breakfast dishes in the weekend, I prefer the dishes to be quick to make and to use the least amount of kitchenware possible.

A frittata is also a great way to use up leftovers to create a fancy omelette.

Salami and Cream Cheese Frittata

Preparation time : 20 minutes

Ingredients :

  • 6 small rounds of chili salami, cubed into very small pieces
  • 2 tblsp cream cheese
  • 4 eggs,beaten
  • A little milk
  • Salt and pepper to taste
  • Chopped coriander
  • 1/2 chopped onion

 

Directions :
Preheat your oven grill.
Heat 2 tblsp of olive oil in a non stick pan and add in the onion. Sauté until translucent and then add in the salami and fry until crispy and brown.
Whisk eggs,milk,seasoning and coriander and add into the pan. Allow the bottom of the frittata to cook and spoon a few dollops of cream cheese over the top.
Place it under a hot grill until the top of the frittata is cooked and bubbly.

Serve immediately with toasted bread or as a light lunch with a side salad.
