Carrot Polenta

As you probably notice with my baby food recipes, I love to feed my little one new flavours and food combinations.

Fortunately, he is adapting to my family’s adventurous palate and he is enjoying mummy’s new creations.

Polenta is a creamy maize like mash that is s delicious if prepared correctly. I like to serve it as a side dish with meat or use it in a casserole….recipes to follow soon.

Due to its smooth texture and amazing taste,  I thought my toddler might enjoy it as well when combined with a meat or vegetable.

Carrot Polenta

Preparation time : 30 minutes

 

Ingredients :

  • 4 medium carrots, peeled and chopped
  • 1/4 cup polenta
  • 1 cup boiling water
  • 1 tblsp butter

 

Directions :

Place carrots in a pot and cover with boiling water. Simmer over medium heat until carrots are soft and cooked through.

In a separate little pot, add the polenta and water and cook over low heat until thick and creamy. Add in the butter.

Combine carrots and polenta and blend with a hand blender until desired consistency is reached.

*this recipe can be made using any vegetables that you have available at home.
