I am always searching for great healthy ideas for lunchbox treats for my son. He is a very fussy eater who sticks to his favorites, and doesn’t venture out and try new foods very often.
When I saw this bran muffin idea on the Internet, it looked like something he might enjoy in his lunchbox.
With a surplus of bran flakes in the cupboard, I whipped up a batch in no time. These muffins are so simple to make and utterly delicious, enjoyed best lathered with butter when they are fresh out of the oven.
They are excellent lunchbox sweet treats and make a perfect picnic addition as well.
Give it a try for your kids, I’m pretty sure you will end up making it regularly.

Bran Flakes Muffins

Makes : 12 muffins

Ingredients :

  • 1 1/4 cups flour
  • 1/2 cup icing sugar
  • 1/4 tsp salt
  • 3 tsp baking powder
  • 1 1/2 cups bran flakes, crushed
  • 1 1/2 cups warm milk
  • 1 egg
  • 1/4 cup oil

Directions :

Mix the bran and milk together and set aside until soft.
Combine the dry ingredients.
Add the egg and oil to the bran mixture and add to dry ingredients. Mix until well combined.
Spoon into lined muffin pan and bake at 200 degrees Celsius for about 20-25 minutes.
