Weekday lunches are the perfect time for me to experiment with different flavours and to create healthy, filling meals for one.
After coming home from school rounds, I like to create a quick and easy meal for myself which is healthy and gives me a burst of energy before leaving the house again for other kids lessons. I prefer to use pantry and fridge staples and try to use previous night supper leftovers to create another delicious and nutritious meal.

Beef Couscous Salad Bowl
Yield : 1 serving
Preparation time : 20 minutes
Ingredients :
- Leftover beef or chicken, shredded
- ¼ cup couscous
- Shredded lettuce
- Sliced cucumber
- Handful of olives
- tomatoes, avocadoes, etc
Dressing :
- 1 tblsp honey
- ¼ tsp dijon mustard
- 1 tblsp sweet chilli sauce
- Salt and pepper to taste.
Directions :
Firstly, prepare the couscous according to package directions.
While the couscous is getting ready, mix the dressing ingredients together.
Layer your lettuce, cucumber, olives and any other veggies in your salad bowl. Spoon fluffy couscous over the salad arranging it close to the edge of the bowl. Fill the centre with a heap of your shredded meat
Drizzle with your dressing and sprinkle over ready made fried onions and sesame seeds. Enjoy !!
