Avocado Coconut Ice Cream

I was thrilled to be gifted an ice cream machine by my sister for my birthday recently. It was mid-winter and nobody was in the mood for ice cream. Now with summer on the way, homemade ice cream making has begun.

The key to a delicious homemade ice cream is the milk and cream base. I am quite fussy about my ice cream and I must have it creamy and smooth.

I love ice cream and so does my kids, so I have to make some healthy combinations as well. This is the first, in a series of posts, of ice cream recipes that I will be posting on the blog. With beautiful avocadoes still in season, I had to try an ice cream using these gorgeous green gems. I paired it with coconut in this recipe, as I used coconut cream as the base.  This ice cream is incredibly easy to make as there is no cooking required.

Avocado and Coconut Ice Cream

Preparation time : 15 minutes prep, few hours chilling, 30 minutes churning

Ingredients :

  • 2 small hass avocadoes, chopped
  • 1 tin coconut cream
  • 1/2 cup cream
  • 1/2 cup sugar
  • 1/2 tsp vanilla essence
  • squeeze of fresh lemon juice

 

Directions :

Blend all the above ingredients until smooth and creamy.

Chill in the refrigerator for a minimum of 3-4 hours.

Churn in an ice cream machine according to manufacturers instructions.
