Peach Nice Cream and Mango Smoothie Duo

With the warmer weather creeping up on us and December heralding the beginning of Summer, the crisp and fresh  mornings call for chilled and healthy fruity treats. I would have never imagined ice cream being an acceptable option at breakfast, but with the creation of the nice cream, you could eat it everyday without feeling guilty. Summer brings in all my favourite fruit like peaches, watermelon, lychees, and mangoes, and I can’t wait to get creative by incorporating them into my desserts and breakfasts.

I started the breakfast series with the Pineapple Nice Cream Smoothie Bowl This is a continuation of delicious nice cream ideas, using only the freshest seasonal produce. These smoothie bowls and nice creams are so simple to make, as long as you have your fruit frozen. With the early season mangoes making their appearance in the local markets and supermarkets, I created a mango and dessert peach nice cream duo.

Peach Nice Cream and Mango Smoothie Duo

Ingredients :

  • 1 banana, frozen
  • 1 peach, frozen
  • 2 medjool dates
  • a handful of mint
  • a tblsp of almond butter
  • dash of milk/almond milk
  • 1 mango, chopped
  • 2 tblsp thick yoghurt
  • a drizzle of honey
  • 2 tblsp crunchy granola
  • more thick yoghurt, to serve
  • peach slices, to serve

Directions :

Make sure that you freeze your banana and peaches in Ziploc bags overnight or for a few hours.

To  create the first layer, Place the frozen fruit, dates, mint, almond butter and milk in a high powered blender, like a Nutribullet, and blend until thick and creamy. Scoop into a tall glass, spoon over 1 tblsp of granola.

To create the next layer, blend the mango, yoghurt and honey. Spoon over the granola, arrange the sliced peaches, spoon over yoghurt, and the remaining granola. Serve immediately.
