Mini Banting Carrot Cakes

I don’t consider myself to be on the Banting diet, as I would never be able to give up carbs totally. But I do enjoy anything that is tasty, and if it is healthy, that is an added bonus. I have been introduced by friends to the HEBA ( Healthy Banting) flour, and I was keen to experiment. It is a locally produced flour consisting of coconut flour, psyllium husks, sunflower seeds and xanthan gum.

I love carrot cake, and I thought it would be nice to try out the HEBA flour for a carrot cake, as the flavours of the carrot and cinnamon would mask the fact that this is a gluten and sugar free cake. I was happy with the final result, although I wouldn’t ditch my original carrot cake recipe just yet, but it is a great alternative for allergy sufferers and those on the Banting diet. I can’t wait to try some other healthy treats with HEBA.

*the HEBA flour can be purchased from Food Lovers Market and can be used to make a porridge, rusks, bread, pizza bases, etc.

Mini Banting Carrot Cakes

Ingredients :

  • 1/2 cup HEBA flour
  • 1/2 cup finely grated carrot
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 cup sweetener/xylitol
  • 1/2 tsp vanilla essence
  • 1/4 cup coconut oil
  • 2 eggs
  • 1/2 tsp mixed spice
  • 1/2 tsp cinnamon

Directions :

Preheat the oven to 180 degrees celcius.

Combine all the wet ingredients and whisk. Mix the dry ingredients together and add the wet mixture and carrots and mix well. Line a cupcake pan with liners and spoon batter into them. This recipe makes 8 small cakes. Bake for about 15 minutes until done.
