With strawberries in full season now, I make sure there is a punnet of this juicy fruit in my refrigerator at all times.
Strawberries are so versatile and can be used in desserts, salads and as a topping on cakes and brownies.
With the special day of Eid approaching soon, I am sure everyone is looking for quick, easy and delicious sweet treat recipes to make.
This is my version of ‘Strawberries and Cream’, and it is so simple to make and only requires a few ingredients and a short setting time. It is a light and refreshing dessert which will be enjoyed by all.
I set my dessert in little jars, with an angle effect, so it looks extra pretty, and the plus is you get a bit of jelly and cream in every mouthful without having to dig deep into the bowl !!
Strawberries and Cream
Preparation time : 20 minutes plus 2 hours setting time
- 1/2 cup finely chopped strawberries
- 1 pkt raspberry jelly
- 1/2 cup fresh cream, whipped
- 2 tbsp castor sugar
Prepare jelly according to package instructions.
Reserve 1/2 cup of jelly mixture.
Add strawberries into the main jelly mixture. Pour into individual bowls, half full, at an angle, if you like, and set in the fridge. Beat cream and the sugar until soft peaks form and then combine with the 1/2 cup jelly mix. Keep the cream mixture in the refrigerator until the jelly has set. Pour this cream mixture on top of set jelly mixture.
Decorate as desired. I used crushed flake and chopped marshmallow on top.
You can double the quantities of this recipe if you require a larger amount.
