Butternut Fritters

I was inspired by this recipe after watching an episode of Sarah Graham’s Food Safari, an excellent series by the way. I love the quick and simple meals that she prepares, with the best quality and freshest South African ingredients, of course.

I am always searching for ideas for meals that would be suitable for my husband and kids, so it would have to be mild yet flavoursome. These fritters definitely fit the criteria. The kids can eat it on its own with some ketchup whilst I glam it up for the adults with sour cream cream and salsa.

Butternut fritters

Ingredients :
  • 500g butternut peeled and cubed
  • Salt and pepper to taste
  • 2 tblsp olive oil
  • 2 tblsp honey
  • 1 tsp crushed garlic
  • 1/2 tsp crushed cumin
  • 1/2 tsp cayenne pepper
  • Mixed dried herbs
  • 1/2 cup self raising flour
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup milk

 

Directions 
Mix the seasonings, herbs, garlic, honey and oil and toss with butternut.
Roast in a preheated 200 degree oven for about 30 minutes until soft.
Allow to cool. Mash with a fork.
Add in the flour, breadcrumbs, egg and milk and mix.
Heat shallow oil in a pan and drop spoonfuls of mixture in.
Allow to cook on both sides until golden.
Serve with a dollop of sour cream, guacamole and salsa.
