‘food on-the-go’ is a must when you are busy with kids and always rushing from swimming lessons to soccer practice or any other extra-curricular activities.
My son’s sports day was one of those days when ‘food on-the-go’ was a necessity. The idea was to make quick prep, easy to eat, mess-free food which was healthy and delicious, of course.
I made Chinese chicken slaw sliders (recipe to follow soon) and as a vegetarian option, these super easy pesto potato sandwiches. And as a sweet treat, sweet potato brownie skewers for dessert.
These sandwiches were incredibly moist and creamy, with just a hint of chilli after each bite…..yum!

Pesto Potato Sandwiches
Yield : 4 whole sandwiches, 16 quarters
Preparation time : 30 minutes
Ingredients :
- 8 slices white bread
- 2 potatoes, sliced thinly and fried
- Cucumbers, halved and thinly sliced
- Sprinkle of Cajun spice
- 2 tblsp Store bought coriander pesto
- ¼ cup Cream cheese
- Handful of Grated cheddar cheese
Remove the cream cheese from the fridge about 10 minutes before preparing sandwiches .
Combine the pesto with the cream cheese.
Use this mixture to spread onto each slice of bread. Sprinkle Cajun spice onto the potato slices.
Top four of the slices of bread with sliced potatoes, cucumber and cheese. Close with the remaining bread slices with pesto on the inside.
Butter bread and toast on a griddle pan until cheese is melted. Cut into quarters and pack in sandwich bags and your food is ready to go.
