I love the versatility and flavour of avocados. I could eat this delicious fruit all year round and never get bored of it.
For the past year, I have been experimenting with avocados and been using them in both sweet and savoury dishes. Try out the avocado mousse that was posted earlier.
These muffins are so yummy and will impress the non-avocado lovers as well. They are so soft in texture and remind me of traditional mielie bread in both taste and aroma.
Enjoy it warm, slathered in soft butter.
These muffins keep really well for a few days (if you can resist not eating them all the same day).

Avocado Muffins
Yield : 6 large muffins
Preparation time : 45 minutes
Ingredients :
- 1 1/2 cups cake flour
- 1/2 tsp salt
- 1 tsp baking powder
- 1/2 cup sugar
- 1/4 cup softened butter
- 1 egg
- 1/2 cup milk
- 1 tblsp lemon juice
- 1 avocado, peeled and chopped
Directions :
Preheat your oven to 180 degrees Celsius and line a muffin tray with paper liners.
Sift all the dry ingredients and rub in to the butter to resemble breadcrumbs.
Liquidize all the wet ingredients until smooth. Mix this into the dry ingredients and stir until combined.
Spoon into muffin liners until 3/4 way full and bake for 25-30 minutes until cooked.
Serve warm with butter.
