Whilst pears are still in season, I am trying to include this delicious fruit in my cooking and baking. I have also used pears to make this sweet potato and pear couscous for my baby.
I love baking muffins as it is so simple to make and it makes a delicious snack any time of the day. It is also easy to hide fruits and vegetables in these baked treats which makes them great for kids. The family enjoyed these carrot and date muffins so I decided to try adding pears into my next batch.
These muffins are light and soft and can be enjoyed with or without butter.
Give these muffins a try before the pear season is over!

Spiced Pear Muffins
Preparation time : 30 minutes
Yield : 6 large muffins
Ingredients :
- 1 cup flour
- 1/4 cup castor sugar
- 2 tsp baking powder
- 1 forelle pear, peeled and grated
- 1 tsp vanilla essence
- 1 egg
- 1/4 cup milk
- 1/4 cup oil
- 1/4 tsp cinnamon powder
- 1/8 tsp cardamom powder
- almond butter and pecan nuts – optional topping
Directions :
Preheat the oven to 180 degrees celcius.
Combine all the dry ingredients and mix together. Add the grated pear.
Mix the wet ingredients together and add to the pear mixture and mix until well combined.
Spoon batter into muffin cases and bake for about 15 minutes until done.
When cool, top with a swirl of honey almond butter and chopped pecan nuts or slice in half and serve warm with butter and orange marmalade.
