Summer Mocktails

I cannot believe that we are at the end of January 2016 already and before you know it, summer will be over and autumn will be setting in.

Before the hot sultry weather disappears completely, you have to give these non alcoholic mocktails a try!

I don’t usually like to experiment much with drinks and juices, as I am a true water and rooibos tea lover. But there was an occasion in the family, and mocktails go perfectly with a barbecue. I must admit that I quite enjoyed them myself as well.

I am sharing 2 mocktails with you below, and they are both refreshing and delicious. I like that they are both light and use fresh seasonal fruits, spices and herbs. Perfect for this hot summer!

Strawberry and kiwi daiquiri

Ingredients :
  • 1 punnet strawberries
  • 4 kiwis, peeled and chopped
  • 2 apples, peeled and chopped
  • 1 cup strawberry and mint syrup
  • 1 litre lemonade
  • 500ml ginger beer
  • Crushed ice

Directions :

Blend the fruits and syrup until pureed. Top up with lemonade and ginger beer and finish with crushed ice before serving.

Spiced Peach Ice tea

Ingredients :

  • 1 liter boiling water
  • 4 Cloves
  • 4 cardamom pods,bruised
  • 2 sticks lemongrass
  • handful of fresh mint leaves
  • 1 cinnamon stick
  • 2 tblsp honey
  • 1.5 liters peach flavoured iced tea

 

Directions :

Steep the herbs and spices in the water for about 30 minutes. Strain and set the flavoured water aside.

Before serving, top up with the peach ice tea, crushed ice, lemon slices and more fresh mint.
