Strawberry Chia Seed Parfait

My new ingredient obsession at the moment (fortunately it is a healthy one) is with chia seeds.
I have only recently bought a packet of these tiny gems and I am looking for new ways to incorporate them in my food. Watch this space for more exciting recipes using this superfood.

There are numerous health benefits in chia seeds, they provides energy, cleanse the colon, aids in digestion and relieves pain, to name a few.
They are so versatile and can be added to smoothies, cereals, desserts, baking and are available at most health shops.

I decided to use them in a simple light pudding and a parfait. I also added them to my smoothies as a thickening agent.
Chia seeds swell when placed in liquid and are tasteless but they add creaminess to the dishes that they are used in.
These parfaits are so refreshing and healthy and make a perfect summer dessert.

Strawberry Chia Seed Parfait

Yield : 4 small bowls

Preparation time : 20 minutes prep time and overnight setting time

 

Ingredients :

  • 250ml coconut milk/cows milk
  • 3 tblsp chia seeds
  • 2 tsp honey
  • 1/2 tsp vanilla essence
  • Chopped strawberries
  • Prepared raspberry jelly

Directions :

Prepare the raspberry jelly according to package instructions.

Combine the milk, chia, vanilla and honey. Mix together and leave to swell overnight in the refrigerator .
The next day, mix together to remove clumps. Layer in individual bowls with the chopped strawberries.
Top with spoonfuls of jelly.
