Roasted Corn and Chicken Fritters

I find fritters/crumpets so quick and easy to make for the kids. Firstly, you could add anything you like in it, and secondly, they are always sure to be loved by all.

There are a few fritter recipes on the blog, like these zucchini fritters, and butternut fritters. I find fritters also a great way of getting the little ones to eat more of their veggies.

I’m sure that you have come across many a sweetcorn fritter, but this one is a keeper! The roasting of the fresh corn on the cob makes all the difference in the taste and flavour of these simple snacks. It is easier to use corn directly out of a can, but you would be missing out on the freshness that the roasted corn adds to these fritters.

These fritters are still really easy to make, and once you have eaten these, you would not go back to corn in the can. Enjoy!!

Roasted Corn and Chicken Fritters

Ingredients :

  • 1 1/2 cups of fresh roasted corn, cut off the cob
  • 1/4 cup shredded chicken
  • 1 large egg
  • 1/4 cup milk
  • 2 tblsp corn flour
  • 2 tblsp cake flour
  • 1 tsp baking powder
  • 1 tblsp chopped spring onions
  • salt and pepper to taste
  • coconut oil, for frying

Directions :

Cook the corn on the cob either in an oven, pressure cooker or on the stovetop.

When cool, slice corn off the cob and measure out 1 1/2 cups. Mix all the ingredients together and add in the corn. Heat a pan over medium heat and add in some coconut oil. Drop a tablespoon of the mixture into the pan to form fritters. Cook for a few minutes on each side until crispy and brown. Serve with a dipping sauce of your choice, ketchup for the kids and perhaps a spicy sriracha mayonnaise for the adults.
