Sundays are my favourite day of the week to experiment with new breakfast ideas.
It is a relaxed and peaceful day with no school rounds or early mornings and the family look forward to a hearty brunch.
I like to try out new savoury and sweet creations as the family enjoy both.
This breakfast hash is so simple to make and you could add any leftovers that you have in your refrigerator or pantry.
The best part is that it is a one pan dish, which means there is less to wash up thereafter.

One Pan Breakfast Hash
Preparation time : 30 minutes
Ingredients :
- 4 eggs
- 2 tblsp milk
- Salt and pepper to taste
- 1/4 cup chopped onion
- 1 potato, cubed
- 1/4 cup chopped red pepper
- A few baby tomatoes, halved
- Chopped sausage, polony, chicken or steak
- 1 tblsp olive oil
- 2 tblsp butter
Directions :
Heat a large non stick pan over medium heat and add in the oil.
Saute the onions until golden in colour, add in the peppers, tomatoes and potato, and allow to cook until the potato is soft. Season with salt and pepper. Add in the cooked meat of your choice.
Move the hash to one side of the pan and melt the butter on the empty side. Increase the heat of the pan.
Whisk together eggs, milk, salt and pepper.
Add the eggs to the sizzling butter and allow eggs to cook and scramble.
Remove from heat once cooked and garnish with chopped coriander and fried onions. serve immediately with toasted bread.
