Lunches on the Go – Part 1

Everyone is looking for quick and easy yet healthy and delicious lunches on the go.

I’m always eating lunch in a hurry, between school rounds and swimming lessons. I have to make something quick and simple which will keep me full and satisfied for the afternoon ahead.

These recipes are guaranteed to ensure that you enjoy a delicious lunch, with the basic ingredients in your refrigerator and pantry.
This is Part 1 of my Lunches on the Go series. I decided to do it in many parts as I have so many lunch ideas and I am adding on new recipes constantly.

Part 1 features my stuffed avocado, crispy noodle egg fry, avocado egg salad, my crumbed chicken sliders and fried chicken and waffles.

I am not posting detailed recipes and quantities, as these are lunch ideas which you could make for yourself alone or for the family.
These recipes don’t have to only be made at lunchtime, they would make a perfect light dinner, snack or weekend picnic treat.

Lunches on the Go – Part 1

 

Stuffed avocados

Avocados a make a great vessel to hold any filling for a quick and easy lunch and they are amazingly healthy too. Prepare a chicken mayo or a tuna filling, whatever you prefer and scoop it into the centre of each avocado half, fill with a salad and a drizzle of honey mustard dressing and you have a nutritious lunch on the go.

 

Avocado egg salad

Prepare a green salad of your choice. Slice a ripe avocado thinly.
Soft boil an egg for 5 minutes.
Prepare a little dressing with salad cream,fresh lemon juice, lemon zest, Dijon mustard and salt and pepper to taste. Sprinkle over chopped pecan nuts and lemon zest.
Assemble and enjoy !

 

Fried chicken and waffles

I almost always like to make my own homemade waffles. You can’t replace the aroma and taste of freshly made waffles. It is very convenient to make them ahead of time and freeze for later. Readymade waffles are handy to keep in the freezer for when you are in a hurry.
Prepare your waffle by heating them on low heat in your oven until warm.
Shred some lettuce and cucumber and anything else that you have on hand.
Cut a few chicken strips. Coat in mayonnaise and seasoned breadcrumbs and fry in a little oil in a pan until crispy. The breadcrumbs can be seasoned with a little salt, pepper and Cajun spice.
Mix together a little sweet chili sauce,maple syrup and mayonnaise.
Assemble and enjoy !

 

Crispy noodle egg fry

Last nights leftover Chinese noodles can be today’s lunch…as a new dish and even more delicious.
Heat a little oil in a pan and add in the noodles. Fry until heated. Make a well in the centre and move the noodles to the side. Crack an egg and allow to cook through. Serve immediately.
This dish is delicious as the noodles crispen up and taste like the crispy edges of a lasagne…yum.

 

Crumbed Chicken Butternut “bun” sliders

If you have been dreaming of a carb-free burger, this ‘burger’ idea is for you.
Slice a whole butternut into a few rounds and use 2 rounds to form your ‘bun’. Cook in a pan with a little olive oil until soft.
Heat a pan over medium heat and cook a ready made crumbed chicken patty until crispy,golden and cooked. Prepare a fried egg. Prepare a salad of your choice. Slice an avocado thinly. Select your choice of sauces or relish. You can add anything else you desire.
Stack all your fillings between the 2 ‘buns’. Assemble and enjoy!
