It has been a slow start to the year and this is my first post for 2016. With everyone in holiday mode and the kids at home, I have been lazy to experiment much in the kitchen. I have also decided to implement more healthy eating in 2016 for my family, as you have probably noticed from my Instagram pictures. Don’t worry, I have not given up carbs completely, don’t think that would ever happen! LOL !

I just think it is important to take note of what exactly we are putting into our bodies and try to eat everything in moderation. As much as I love eating fruits and vegetables, I could never give up chocolates and other sweet treats, but again, all in moderation. I hope to inspire you with some healthy recipes for 2016, which you could share at your family table.

I think it’s quite apt that my first post for 2016 be something healthy and nourishing.When I first saw Jamie Oliver make this salad on his comfort food series, I knew this was my kinda food.

Gado Gado is Indonesian street food and is unlike the typical unhealthy, greasy, messy food. this mix is healthy and absolutely delicious.
Gado Gado means medley and refers to the combination of an assortment of vegetables.
The best part is that you can mix together anything you like, or have available and toss it together with this incredible lush peanut sauce. This dish can be unique every time you make it by swopping different vegetables and ingredients.
You can use my veggie list as a guide but the peanut sauce is compulsory and makes this a winning dish.
You could make this as an appetizer or light summers day meal and you won’t feel guilty after eating it too.

Gado Gado

Ingredients :

  • 1 cup Assorted sliced cabbage
  • Sliced cucumber
  • 1/2 cup Shredded lettuce
  • 6 Julienne carrots
  • 2 tblsp Chopped pepperdews
  • 1 Sliced avocado
  • 1 Soft boiled egg, sliced
  • Sliced chicken
  • Handful of Roasted cashews
  • Sauce :
  • 1/4 cup crunchy peanut butter
  • 1 tblsp soy sauce
  • 1/4 cup coconut milk
  • 1 tblsp honey
  • 2 tsp chilli sauce
  • 1/4 tsp crushed garlic
  • Dash of lemon juice
  • Dash of fish sauce (optional)

Directions :

Prepare the sauce by whisking the ingredients together. Smear a layer of the sauce on your serving plate first and then assemble the veggies over.
Pour over the rest of the sauce and sprinkle the cashews. Toss together before serving.
