Chinese Chicken Fried Rice

If you enjoy Asian inspired flavours as much as I do, then this dish is definitely for you.
It is quick and easy and is a sure family pleaser.
This fried rice was created using leftovers and a few pantry staples. It makes an excellent light meal and is full of flavour and great taste and you could easily double the recipe to feed unexpected guests when you are in a hurry.

Chinese Chicken Fried Rice

Serves : 2 people

Preparation time : 30 minutes

Ingredients :

  • 2 cups cooked and chilled basmati rice
  • 200g cooked shredded chicken
  • 1/2 an onion , chopped
  • 1 small packet Hawaiian stir fry mix
  • 2 tbsp olive oil
  • 1 egg
  • 2 tbsp soy sauce
  • 1 tsp honey
  • 1 tsp chili and garlic paste
  • 1 tsp sesame oil
  • 1 tbsp water
  • Chopped coriander/spring onions

 

Directions :
Heat a large pan/wok over medium heat and add in the olive oil.
Saute onion until it is golden and add in the vegetable mix and allow to cook.
Once cooked, move aside to one side of the pan and add in the beaten egg and scramble. Then combine with the  vegetables.
Add in the chicken and mix.
Combine water,sauce,honey,sesame oil and chili paste. Add into the pan.
Lastly, add in the rice and mix lightly.
Close pan and allow to warm through.
Garnish with chopped herbs and serve immediately with a crunchy garden salad on the side.
