Pineapple Nice Cream Smoothie Bowl

With the warmer weather creeping up on us and Summer on our doorstep, the crisp and fresh  mornings call for chilled and healthy fruity treats. I would have never imagined ice cream being an acceptable option at breakfast, but with the creation of the nice cream, you could eat it everyday without feeling guilty.

The combinations are endless, and I am excited to get experimenting. This is the first, in a series of delicious and creamy breakfast nice creams. These smoothie bowls are so simple to make, as long as you have your fruit frozen. When you notice your bananas getting a little over ripe, peel them, and place them in a sealable Ziploc bag and freeze. They will not change colour and make life so much easier. Do the same with other seasonal fruit as well, kiwi fruit, strawberries, and pineapples.

This pineapple nice cream is so creamy, its as though you are eating a pina colada. Smoothie bowls are like blank canvasses waiting to be embellished with texturally colourful toppings. Loading your smoothie bowl with toppings is the fun part. You can be as creative as you like, and top your creation with healthy goodies. Pineapple Nice Cream Smoothie Bowl

Ingredients :

  • 2 bananas, frozen
  • 1 cup frozen pineapple pieces
  • 1/4 cup coconut milk
  • 1 tblsp honey
  • sliced pear
  • cubed watermelon
  • cubed kiwi fruit
  • mixture of nuts and seeds

 

Directions :

Combine the bananas, pineapple, honey and the coconut milk in your Nutribullet or high powered blender and blitz until a smooth consistency, almost like a soft serve. Freeze for a few hours if you prefer it more solid or eat immediately topped with fruit and nuts of your choice.
