Bread and Butter Pudding

There is a cold chill in the air and it’s time to warm up with delicious hot puddings and fondants. I will be posting new winter desserts regularly, so watch this space. I have had people message me and ask me to post this recipe asap as they have just purchased their stash of the new Albany cinnamon bread and can’t wait to indulge.

Bread and butter pudding is an old classic, loved by both young and old.
This recipe is an adaptation of my mums neighbors one, and it is a family favourite. My mum has fond memories of indulging in this warm pudding when brought over by her neighbor, whilst she was pregnant with ME !
My mum has adapted it slightly, and I have added a new twist by swopping out normal plain bread with the delicious flavoured Albany bread. This sweet scented bread adds a richness and enhances the flavour of the pudding.

I hope you enjoy it as much as we do and the best part is that it’s so simple to make, that you could whip it up in a jiffy, if you have unexpected guests coming over. This pudding tastes best when baked and served warm immediately.

Bread and Butter Pudding

Serves : 6 people

Ingredients :

  • 6 slices Albany Delights Cinnamon Popcorn bread
  • 1 litre full fat milk or half n half
  • 3/4 cup sugar
  • A cinnamon stick
  • 1 tsp vanilla essence
  • 1 tblsp custard powder
  • 4 eggs, beaten
  • Nutmeg

 

Directions :

Boil the milk, sugar, custard powder and cinnamon stick. Allow to cool, then add in the eggs and vanilla.
Remove crusts from bread, butter both sides lightly and lay in a greased dish. Pour in the milk mixture, and allow bread to soak in. Grate nutmeg over the top.
Bake in a double boiler in a 180 degree preheated oven for about 45 minutes to an hour.
Enjoy warm.

*If you prefer more pudding and less bread, reduce bread to 4 slices, and bake in a smaller deeper dish.
