Crunchy Nachos Salad

Mexican food is a favourite in my home…nachos, tacos, quesadillas, tortillas, enchiladas and the list goes on.
I love to play around with Mexican flavours and I enjoy being as creative as possible with the dishes. Mexican food makes a perfect appetizer or light meal for the weekends.

Nachos are great food for game day or as a light dinner on a Saturday night.
Try out these Pizza Nachos which are quick and easy to make.
For more complex flavours and taste, This nachos salad makes you feel like you eating a bowl of healthy goodness as it is loaded with Raw vegetables. The best part is that it has the comfort food feel of melted cheese, beans and crunchy nacho chips….yum…I feel like making a bowl RIGHT NOW !

Crunchy Nachos Salad

Preparation time : 30 minutes

Ingredients :

  • 1 packet store bought nachos chips
  • 1 cup grated cheese
  • 1 sliced avocado
  • 1 tin baked beans
  • 1/4 cup chopped onion
  • 1 tblsp olive oil
  • 1/2 cup tomatoes, liquidized
  • Salt and pepper to taste
  • 1/4 tsp garlic
  • 1/2 tsp Cajun spice
  • 1/4 tsp cayenne pepper
  • Finely chopped cucumber, carrots, and yellow pepper
  • Optional : creme fraiche to serve

 

Directions :
Preheat the oven to 180 degrees Celsius.
Saute onion in the oil over medium heat until translucent. Add in the spices and tomatoes and allow to simmer for 10 minutes. Add a little water if necessary. Add in the tinned beans and simmer.
Chop the salad ingredients and avocado and set aside.
Lay nacho chips on a flat tray in a single line and sprinkle over the cheese. Place in the oven for 10 minutes until the cheese is melted.
Remove and place chips on our serving plate. Pour over the beans and sprinkle the chopped salad over.
Serve immediately.
