Getting the family to include more fruits and vegetables in their diet is always a mammoth task.
I have to always try and sneak in the healthy stuff in some of their favorites.
Crunchy fritters are always welcome at home, so I thought I would add in some zucchini and carrots to make it a healthy snack for my family.
Fortunately, the family enjoyed it and requested a second batch a few days later.
I enjoyed the fritters as well and I am not usually a zucchini fan. I would definitely experiment in the future, using other vegetables as well.

Zucchini and Carrot Fritters
Preparation time : 30 minutes
Ingredients :
- 4 zucchini/courgettes, finely grated
- 4 carrots, finely grated
- 1/2 cup coarse breadcrumbs e.g. Panko
- 3 eggs, beaten
- 1/4 cup grated cheese
- Salt and pepper to taste
- 1/2 tsp crushed garlic
- 1/2 tsp green chillies (omit if you are making this for the kids)
- Optional : 1 tsp zaa’tar for a middle eastern twist
Directions :
Combine all the ingredients together and mix well.
Heat a non stick pan over medium heat. Add a little oil to coat the base.
Drop spoonfuls of the mixture and flatten into a fritter. Allow each side to brown and become crunchy and then remove.
Serve hot with dipping sauce of your choice.
