Pizzas, in all sizes and forms, are a family favourite at home. I enjoy experimenting with different bases and toppings, so the family don’t get bored with the usual traditional pizzas.
I love to try out new flavour combinations, especially with middle eastern spices. These spices are so mild yet so flavourful and aromatic.
This flatbread idea was used as an appetizer for Iftar during the month of Ramadan. You could serve it as a light lunch or a starter at dinner. The family enjoyed it thoroughly and the combination of flavours worked well together.
This ‘pizza’ uses a naan flatbread as a base, hummus as the base sauce and a yummy fried chickpea topping. If you are vegetarian, you could omit the chicken. No cheese on this pizza, which makes it dairy free as well.

Middle Eastern Flatbread Pizzas
Preparation time : 45 minutes
Ingredients :
- Avocado hummus :
- 1 ripe avocado, chopped
- 1/2 tin chickpeas, drained
- 1/2 tsp crushed garlic
- 1 tblsp fresh lemon juice
- salt and pepper to taste
- Other ingredients :
- 1/2 tin chickpeas
- 2 ready-made flatbreads
- shredded cooked chicken
- 1/2 tsp cayenne pepper
- 1/2 tsp crushed cumin
- 1/4 tsp sumac
- 2 tblsp olive oil
Directions :
Place all the ingredients for the hummus in a food processor and puree until smooth. Set aside.
Heat the oil in a small frying pan, once hot, add in the spices and the remaining chickpeas. Fry until they are crispy and golden.
Place flatbreads on a baking tray and warm in the oven until soft. Top with the hummus, shredded chicken and the chickpeas.
Sprinkle over crushed fried onions and serve immediately.
