Strawberry Cheesecake Trifle

While browsing through the recipes on Walnut Pesto, you will notice that most ingredients are pantry and fridge staples. If I do use an odd ingredient, I am most likely to use it in other recipes.

I don’t like to waste any food, if I do buy ingredients for a particular test dish, I always use up leftovers in other meals, and sometimes end up creating a new test dish lol.

This was the case when I created this trifle.

I had leftover custard from the malva pudding, the night before, and a handful of strawberries. I checked around the kitchen to see what else was available, and I found some chocolate chip muffins and some cream cheese. I put it together and came up with this decadent and easy trifle.

Give this dessert a try when you are looking for something quick, easy and refreshing and it does not require any setting time as well.

Strawberry Cheesecake Trifle

Preparation time : 20 minutes

Yield : 6 small bowls

 

Ingredients :

  • 600ml vanilla custard
  • 10 strawberries, chopped into small pieces
  • 1 tablespoon castor sugar
  • dash of lemon juice
  • 1/4 cup cream cheese, softened
  • 3 chocolate chip muffins, or any cake of your choice
  • whipped cream (optional)

 

Directions :

Mix custard and cream cheese until well combined and smooth.

Slice each muffin into thin rounds. Combine strawberries, sugar and lemon and allow to sit for 5 minutes. Discard the excess liquid before use.

Layer in individual bowls with custard at the bottom, slice of muffin, custard, strawberries, slice of muffin and cover the top with custard.

You can top with whipped cream to make it extra decadent. Decorate as desired.

I topped mine with a piece of almond nougat and half a Lindt Lindor ball. Yum….
