Cinnamon Swirl Pancakes

Pancakes have to be my son’s favourite breakfast treat, after toasted cheese sandwiches, of course !!

I had just discovered that it was International Pancake Day and I knew my son would never forgive me if I didn’t whip up a a batch of his favourite pancakes.

I decided to put a twist on the traditional pancake by adding a swirl of cinnamon butter to each pancake. It is super yummy and can be eaten on its own…

Cinnamon Swirl Pancakes

Preparation time : 30 minutes

 

Ingredients :

  • 1 cup self raising flour
  • 1 egg
  • 1 cup milk
  • Pinch of salt
  • 2 tblsp melted butter
  • 1 tblsp brown sugar
  • ½ tsp cinnamon

 

Directions :

Whisk the flour, egg, milk and salt together until smooth and allow to rest for about 10 minutes.

Mix the butter, sugar and cinnamon in a separate bowl. Heat a non-stick griddle on medium heat and ladle the batter to form a pancake.

When bubbles appear, spoon the cinnamon butter in a spiral over the top and then flip over.

Cook until done and continue making pancakes until the batter is finished.

Serve warm with Nutella, maple syrup and sliced strawberries or eat it fresh of the pan on its own! yum!
