Berry Eton Mess
Preparation time : 20 minutes
- Mini meringues, crushed
- 1 punnet raspberries/strawberries
- 250ml fresh cream, whipped
- 3 tablespoons sugar
- Sliced pistachios and chocolate curls to decorate
Take 1/2 punnet of the berries and add 1 tbsp sugar to it and mash with a fork until it forms a chunky purée. Set aside.
Whip the cream with the remaining sugar and fold through the purée.
Crush the meringues into bite size pieces and layer with the berry cream in individual bowls. End with the cream and decorate with whole berries, pistachios and chocolate curls.
