Tex Mex Ranch Chicken Pasta Salad

I love to experiment with new flavours and to try out new cuisines on a regular basis. Its exciting and I never get bored of cooking.

Growing up in a South African Indian home, chilli powder and turmeric were the staple spices in most dishes. As flavourful as these spices are, I have started to experiment with new spices and tastes in my kitchen. I do love my Indian curries and I will be posting my favourite traditional dishes, but with a Walnut Pesto twist, of course.

There are so many different and amazing spices, flavours and cuisines in the international food world that we have not tried yet. I want to introduce you to new flavours and aromas and show you how to incorporate them into your daily cooking. It is also important to introduce your kids to different flavours and tastes through the use of mild spices and herbs.

This pasta rice salad was a spur of the moment Mexican idea. I was bored of the usual pasta salad that I usually make, so I wanted to think up a new fresh and flavourful dish. Pasta salads are a family favourite in my home and they make a perfect light summers day lunch or a perfect side dish at a barbecue or picnic.

Tex Mex Chicken Ranch Pasta Salad

Preparation time : 30 minutes plus 30 minutes refrigeration time

Serves : 2 hungry eaters

 

Ingredients :

  • 1 cup pasta rice
  • 3/4 – 1 bottle Ranch dressing
  • 250g cubed chicken fillets
  • 1/2 onion, chopped
  • 1/2 diced red pepper
  • 1 tsp Cajun seasoning
  • 1/2 tsp cayenne pepper
  • 1/2 tsp crushed garlic
  • Salt and pepper to taste
  • 1/2 tin cream style sweetcorn
  • Barbeque corn chips, to serve

 

Directions :

Boil pasta rice in salted water until al Dente.

Sauté onions and peppers over medium heat until soft, add chicken, garlic, seasoning, salt and cayenne pepper.

Combine ranch dressing and cream style corn, add in the chicken and mix in the onion mixture. Toss in the pasta rice and mix lightly. Add ranch dressing until the pasta is moistened well. Refrigerate until ready to serve.
Serve with crunchy lettuce leaves and crushed barbecue corn chips on the top.
