I was approached by Simply Chicken to do an article using their products to create quick and easy kids meals. Click here to view the post and recipes.

After successful completion of the article, I decided to partner with Simply Chicken again.

They have recently launched 2 new products, and requested my foodie expertise to think up some fresh and new ideas for these products. I always look forward to the new product additions to the Simply Chicken range. Their fresh and frozen chicken is delicious and very addictive.

I had the opportunity to try out their new products, which are their Cheesies, golden cheesy chicken nuggets, and their new individually wrapped smoked  Viennas.

Viennas are not a common food item in my home, but the new Simply Chicken viennas would definitely make a reappearance in my family’s meals. The smoked flavour makes these viennas very versatile and tasty. I would use them diced in salads, stews and pastas. They are made from good quality, wholesome ingredients and they are 100% halal.

The overall packaging of the smoked viennas is very fresh and clean and definitely eye catching in the supermarket aisle.I love the neat, individual packaging as well which make these viennas ideal as a lunch box snack. Each wrapped Vienna also has an easy opening which is great for little kids.

Chicken nuggets and cheese is a perfect comfort food combination and every kids dream meal. The new Cheesies are crunchy, cheesy and very addictive. The packaging is great and the name Cheesies is a definite winner amongst kids and adults alike.

Mexican Fiesta

Create this Mexican meal and impress your family and friends using the Cheesies from the Simply Chicken Range.

 

Cheesie Slaw Tacos

These crunchy Mexican bites are so delicious and easy to make. Ensure you have all the ingredients and you are good to go.

Ingredients :

  • 4 readymade taco shells
  • 8 pieces of Cheesies nuggets
  • 1/2 cup mixed cabbage, lettuce and carrot, grated
  • 2 tablespoons mayonnaise
  • Grated cheese
  • 1 avocado, cubed
  • 2 tbsp. lemon juice
  • Salt and pepper to taste
  • 2 tbsp. peppadew relish

Directions :

Prepare the taco shells according to package instructions.

Preheat the oven to 200 degrees Celsius and bake the nuggets for 20 minutes, turning them halfway through the time.

Mix the grated veg, mayonnaise, salt and pepper.

Mash the avocado, lemon juice, relish and seasonings.

Assemble by filling the bottom of each taco with slaw salad, followed by 2 nuggets, the avocado relish and cheese. Enjoy!

 

One Pan Cheesie Enchilada

This dish is great for a dinner party or as a weekend lunch and will definitely be a crowd pleaser.

Ingredients:

  • 8 pieces of Simply Chicken Cheesies
  • 1 tin baked beans
  • 1/4 onion, chopped
  • 1 tbsp. olive oil
  • Salt and pepper to taste
  • 1 tomato, chopped
  • 1/4 cup chopped green pepper
  • 1/2 tsp Mexican spice
  • 1/2 tsp cayenne pepper
  • 1/2 cup whole kernel corn
  • 1 avocado, diced
  • 2 flour tortillas, cut into strips
  • Chopped coriander

Directions :

Sauté onion in the oil over medium heat. Add in the pepper, followed by the spices and the tomato. Allow to simmer for 10 minutes. Add a little water of required.

Add in the tinned beans and heat through.

Preheat the oven to 200 degrees Celsius and bake the nuggets for 20 minutes until cooked through.

In your casserole, place the beans at the bottom, followed by the corn.

Place tortilla strips in the hot oven until they are crisp.

Place the strips over the corn, and add in the avocado.

Slice each nugget into 3 strips and place over the enchiladas.

Garnish with chopped coriander.

Serve immediately.

 

Breakfast Vienna Cups

These brunch treats are so quick and easy to make and the ingredients are basically kitchen staples.

Ingredients :

  • 6 squares puff pastry, thawed
  • 2 Simply Chicken smoked viennas, diced
  • 2 tbsp. diced onion
  • 2 tbsp. diced red pepper
  • Salt and pepper to taste
  • 2 eggs
  • 2 tbsp. milk
  • Grated cheese

Directions :

Preheat your oven to 180 degrees Celsius.

Place each pastry square in a muffin tin. Add in a little Vienna, onion and pepper.

Beat the eggs, milk and salt and pepper. Pour a spoonful of egg mixture into each pastry tin.

Sprinkle over the cheese and bake for about 20 minutes until puffy and golden.
